Chocolate Peanut Butter Rice Krispies

Rice Krispies (or Rice Krispie Treats) are a childhood classic of mine. A simple, no bake, easily customizable recipe. Simple enough that even my Mum would occasionally whip up for school events.

The amounts I used are only guidelines, if you like them more gooey, then add more marshmallow; if you like them more crunchy, then add more cereal; don't like peanuts? Then don't add them. You get where I'm going with this.

Chocolate Peanut Butter Rice Krispies

Makes one 9x13" pan

  • 6 cups / 280gm chocolate rice cereal
  • 1 cup / 50gm pretzels, broken into small pieces
  • ⅓ cup / 60gm peanuts, unsalted
  • 4 Tbsp / 60gm butter, unsalted
  • 1 16oz bag / 454gm marshmallows
  • 1 tsp / 5ml  vanilla extract
  • ½ cup / 133gm peanut butter, smooth
  • ½ cup / 90gm chocolate chips, semi sweet

1. Melt the butter on medium low heat, in a large pot (big enough to fit ,and later stir, all the ingredients together.)

2. Add marshmallows and stir until all the marshmallows have fully melted into the butter.

3. Add peanut butter and vanilla then mix together.

4. Take the pot off the heat, and add rice cereal, pretzels pieces and peanuts.

5. Stir in chocolate chips once mixture has had a chance to cool down a bit or your chocolate chips will melt into the mixture.

6. Finally pour and press rice krispie mixture into a greased 9x13 inch pan, and let cool before cutting. Enjoy!

I cut mine into rows of 3x4 and got 12 generous serving bars, but again feel free to cut them any way you'd like.
